Fresh cheeses are wonderful but they are only the beginning. We will explore different methods of culturing, pressing and curing cheeses as we make some simple hard cheeses. We will also discuss aging and the use of molds and bacteria. Join us on this continuation in the adventure of cheesemaking! Drumlin Farm is committed to the concept of eating locally, eating well, and supporting sustainable lifestyles. By learning more about our food - how it is grown, where it comes from, and how to prepare it - we increase our understanding of sustainability, stewardship, and the relationship between us, our food choices and the environment. These Know Your Food programs will encourage discussion and offer opportunities to share and have a good time while becoming more informed about food, farming, and the environment. Registration is required. Call (781) 259-2206 for details. See http://www.massaudubon.org/catalog/listing.php?program_code=1777-DFP12SP1 for more information.
