How to buy fish, what to buy that’s safe and sustainable, how to prepare it are covered in sustainable seafood workshops. Fish on Ice participants will work with fish and shellfish from the freezer. A lot of people eschew frozen fish, thinking the fresh stuff is superior. It’s great to have steaks and fillets tucked away, and it’s quick and easy to prepare them beautifully.
